Assistant Director of Food and Beverage (Finance)



Job Description Summary

The Assistant Director of Food and Beverage sets the tone for Sonesta's Culture of Caring. We expect leaders to focus on creating amazing moments for guests and team members and dig deep to find ways to create success for their team.

The Assistant Director of Food and Beverage assists the Director of Food and Beverage in directing and managing the Food and Beverage function within the property. The Assistant Director of Food and Beverage is responsible for directing and managing all aspects of the property's day to day operations of the Food and Beverage department, including Restaurants/Bars, Studio outlet, and the Banquet department. The person in this position is responsible for maintaining the Food and Beverage quality and service standards as well as driving profits.

Job Description

  • Work Environment

    The person in this role works mostly in a service environment, with some office time reserved for administrative tasks.

    Physical Demands

    o The person in this role may be exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly. Must be able to push and pull carts and equipment weighing up to 250 lbs. occasionally.
    o The person in this role may be asked to lift, carry, push, pull or otherwise move objects.
    o Must be able to tolerate extreme temperatures - i.e. freezers, loading dock.

    Expected Hours of Work:

    o Must be flexible to work variable days of the week to include weekends and holidays.
    o Must be flexible to work variable shifts (days, nights, overnights).
    o Ten to twelve hour shifts sometimes required.

    Education and Experience

    o High school graduate, some college or equivalent.
    o Must have a minimum of 4 years' experience as Restaurant Manager and/or Director of Banquet, preferably a 4-star restaurant.
    o Experience in a hotel or a hospitality-related field preferred.
    o Must be able obtain and maintain any required licenses, certificates and permits.

  • Job Description
    • Operational/Functional:
    • Provide direction and manage all aspects of the Banquets service department, the Studio outlet, and the ArtBar restaurant, thereby ensuring top efficiency and high guest satisfaction.
    • Coordinate and supervise the preparation, presentation, buffet set ups, layouts and service of food and beverage products of functions assigned to ensure highest quality at all times.
    • Responsible for arranging all Food and Beverage details for all functions, including linens, table set ups, decorations.
    • Visually inspect rooms set-ups and equipment to ensure adherence to quality standards.
    • Attend Resume and BEO meetings.
      • Develop and maintain lasting relationships with in-house groups to ensure excellent service and retention of business. Respond to guest complaints and ensure proper follow-up is completed.
    • Process payroll after each function or event and accurately calculate number of hours worked and gratuity distribution.
      • Coordinate proper execution of food preparation and set up such as informing kitchen staff when to start plating dishes.
      • Discuss with the Catering and Convention Services Managers all details of events and functions and plans for flawless execution.
      • Check bar controls: shot glass use, red lining, and bottles totally empty.
      • Must be familiar with and adhere to all liquor liability laws:
        • Dram Shop Act - Prohibiting the sale/service of alcohol to intoxicated guests.
        • Prohibiting the sale or service of alcohol to minors.
      • Must have a complete knowledge of all liquor brands, beer and non-alcoholic selections available in restaurant.
      • Inspect table set-ups; check for cleanliness, neatness and agreement to departmental standards; rectify deficiencies with respective personnel.
      • Maintain high standards of personal appearance and grooming, including wearing nametags.
      • Uphold sanitation standards and works with engineering to maintain the condition of the asset in all F&B areas.
      • Review findings from comment cards and guest satisfaction surveys with F&B team and ensure appropriate corrective action is taken.
      • Must have a broad knowledge of every F&B related subject in a first-class property.
      • Food handlers, Food Allergen Awareness, and TIPS certificates required.
      • Assist in hiring, promoting, firing and training of all Banquet department, ArtBar Restaurant, and Studio outlets employees.
      • Be visible on the floor and assist staff as needed during each meal period.
      • Ensure all Sonesta safety and sanitation standards are adhered to.
      • Maintain high standards of personal appearance and grooming.
    • Perform other duties and projects as requested by management.
    • Strategy and Planning:
    • Provide direction and manage all aspects of the banquet service department, the studio outlet, and the Artbar Restaurant.
    • Direct and completes scheduled inventories.
    • Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. Adjust schedules throughout the week to meet the business demands.
    • Coordinate with the Catering & Conventions Services managers all details of upcoming functions and plan for smooth service.
    • Financial Management:
      • Monitor payroll in the department by ensuring meal breaks are taken and time cards are accurate.
      • Maintain the operating budget and achieve all revenue and expense targets.
      • Help direct financial operations of the department, including budget management, and monitoring of expenditures.
      • Participate in the budget and forecasting processes as directed by the Director of Food and Beverage.
    • Managing your Team:
    • Interview, hire, train, and promote Food and Beverage staff. Provide constructive and consistent feedback and recommend disciplinary action when appropriate.
    • Ensure all F&B employees receive proper training applicable to their position and career aspirations in accordance with company policy and/or local laws.
    • Manage the performance evaluation process of all team members.
    • Ensure employees are treated fairly and equitably.
    • Coach team by providing specific feedback to improve knowledge, skills, and performance.
      • Establish and maintain open, collaborative relationships with direct reports and entire Food & Beverage team. Ensures direct reports do the same for their teams.
